This method of roasting cauliflower yields a wonderfully rich flavour, which is perfectly complemented by a sharp and herby caper dressing. It makes an excellent side dish for a traditional roast dinner and can also stand alone as a satisfying vegetarian main course. The process involves roasting the cauliflower with butter before finishing it with a vibrant dressing made from capers, parsley, lemon, and olive oil.

Roast Cauliflower with Caper Dressing

Ingredients

  • 1 medium cauliflower leaves trimmed and reserved
  • 50g butter softened
  • 1 tbsp olive oil
  • 4 tbsp capers
  • 2 tbsp chopped parsley
  • 1 lemon zested and juiced

Method

  1. Preheat the oven to 190C/170C fan/gas 5. Place the trimmed cauliflower leaves in a small roasting tin and position the cauliflower in the centre. Coat the cauliflower with the softened butter, season with salt, and roast for 20 mins.
  2. Lower the oven temperature to 160C/140C fan/gas 3. Continue to cook the cauliflower for 20 mins more, basting it with the melted butter. Combine the olive oil, capers, parsley, lemon zest and juice with the hot butter in the tin. Spoon this dressing over the cauliflower several times to allow it to absorb the flavours. To serve, cut the cauliflower into wedges and accompany with the roasted leaves.
