Baked Stuffed Romano Peppers
These vegetarian stuffed Romano peppers make a delightful Italian-inspired meal. Halved peppers are first roasted, then filled with wilted spinach and a flavourful crumb mixture featuring pine nuts, Parmesan, chilli and capers. After a final bake, they emerge as a satisfying light supper with crusty bread or a complementary side dish for grilled meats or fish. The recipe serves two and takes just 50 minutes from start to finish.
Ingredients
- 2 Romano peppers halved and deseeded (use normal peppers if unavailable)
- 2 tbsp olive oil plus 1 tsp
- 1 slice wholegrain bread
- 2 tbsp pine nuts
- 2 tbsp grated parmesan (or vegetarian alternative)
- 1 red or green chilli deseeded and chopped
- 2 tsp capers
- good handful parsley roughly chopped
- 200g young spinach leaves
Method
- Preheat the oven to 190C/fan 170C/gas 5. Arrange the pepper halves in a roasting tin, drizzle them with one teaspoon of oil and season with pepper. Bake for 20 mins.
- While the peppers cook, toast the slice of bread. Process it into coarse crumbs using a food processor. Combine these crumbs with the pine nuts, Parmesan, chopped chilli, capers, parsley and the remaining two tablespoons of oil. Boil a kettle. Place the spinach in a colander and pour the boiling water over it to wilt. Squeeze out all excess liquid.
- Spoon the wilted spinach evenly into the pepper halves. Cover each with the prepared crumb mixture. Place the tin back in the oven and bake for a further 15 mins.
