Sliced Turnip and Bacon Bake
This comforting bake makes excellent use of turnips, layering them with smoked streaky bacon, fried onions, and mature cheddar. The dish is baked until the turnips become perfectly tender. It's a flavoursome British recipe that works wonderfully as a hearty side or a satisfying main course, taking roughly 2 hours to prepare and cook.
Ingredients
- 85g butter
- 6 rashers smoked streaky bacon chopped
- 1 tbsp fresh thyme leaf
- large onion finely sliced
- 1 1/2kg turnip peeled and sliced
- 100g mature cheddar grated
Method
- Preheat the oven to 180C/fan 160C/gas 4. Melt half the butter in an ovenproof frying pan. Cook the chopped bacon for a few minutes, then stir in the thyme and sliced onions. Season and continue cooking for 8-10 mins until the onions are soft and golden. Transfer the onion mixture to a bowl, leaving the buttery juices behind in the pan.
- Remove the pan from the heat. Create layers in the pan with the sliced turnips, scattering fried onions, sprinkling grated cheese, and dotting with the remaining butter between each layer. Season with a little salt and plenty of pepper as you build. Cover the pan tightly with foil and bake for 1-1¼ hrs until the turnips are tender when tested with a knife point. Allow the bake to rest for 5 mins. Invert it onto a plate or board, cut into wedges, and serve.
