Pork Meatball Bites

Ingredients

  • 2 tbsp clear honey
  • 3 tbsp fish sauce
  • 450g minced pork
  • 4 spring onions finely chopped
  • 1small garlic clove crushed
  • 2 tsp lemongrass finely chopped
  • 1 tsp cornflour
  • 1 tbsp finely chopped fresh mint
  • 2 tbsp finely chopped fresh coriander
  • olive oil for frying
  • 1 tsp chopped fresh coriander
  • 3 spring onions finely sliced
  • 2 tbsp lime juice
  • 2 tbsp light soy sauce
  • 1 tsp sesame oil

Method

  1. Begin by preparing the meatball mixture. Warm the 2 tbsp of honey gently in a non-stick pan, then stir in the 3 tbsp of fish sauce to create a syrup. Allow this to cool completely.
  2. Place the 450g of minced pork into a mixing bowl. Add the cooled honey syrup, the finely chopped spring onions, the crushed garlic clove, 2 tsp of lemongrass, 1 tsp of cornflour, and the chopped mint and coriander. Combine everything thoroughly and season with salt and plenty of black pepper.
  3. Form the mixture into 20 evenly sized balls. Arrange them on a baking tray lined with greaseproof paper and refrigerate for 30 mins. Meanwhile, prepare the sauce by combining all the listed sauce ingredients together in a bowl and setting it aside.
  4. Lightly brush the chilled meatballs with olive oil. Fry them in a pan for 3-4 mins on each side until cooked through and golden. Serve them warm with the prepared dipping sauce.
