Fortune Cookies
This recipe details the process for creating homemade fortune cookies. The key is to spread the batter into very thin rounds before baking. As the cookies harden rapidly after coming out of the oven, you must work swiftly to fold them around paper fortunes and shape them into their classic form. It is advised to bake only a few at a time to ensure success. The recipe yields 10 to 12 servings and takes just 17 minutes from start to finish.
Ingredients
- 2 large egg whites
- 1/3 cup sugar
- 4 tablespoons melted butter, cooled
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon almond extract
- 1/2 teaspoon lemon extract
Method
- Prepare small paper fortune strips measuring 2 1/2 by 1/2 inches.
- Set your oven to heat to 350°F.
- Apply grease to a cookie sheet.
- Beat the egg whites on a low setting until they become light and foamy.
- Add the sugar and keep beating the mixture until soft peaks are formed.
- Mix in the cooled melted butter, flour, salt, and both extracts until everything is fully incorporated.
- Place a tablespoon of the batter onto the greased cookie sheet.
- Use a spoon's back to spread the batter into a very thin circle roughly 3 inches wide.
- Another method is to use a 3-inch ring template, such as a modified jar lid, to contain the batter before lifting it away.
- Bake only 2 or 3 cookies at once, as you need to shape them while they are still hot and pliable.
- Bake the cookies for about 5-8 minutes, until the edges turn a light golden colour.
- Take the cookies off the sheet with a spatula and transfer them to a work surface.
- Position a fortune strip in the centre of the cookie's lower half, then fold the cookie over to create a semi-circle.
- Pull the two ends of the semi-circle upwards and towards each other to form a crescent shape.
- Pull the folded edge of the cookie across the rim of a small cup, letting the ends point downwards.
- Place the shaped cookie into a mini muffin tin to cool and set, which helps it stay crisp.
- Continue the process with the rest of the batter.
