This simplified version of Filipino longanisa uses smoked kielbasa for a shortcut. The sausage slices are coated in a marinade of brown sugar, vinegar and soy sauce, then left to infuse for at least two hours. They are then cooked in a skillet with water and oil until the liquid reduces and the sausage becomes beautifully browned and sticky. It's a savoury-sweet breakfast dish that captures the classic flavour with minimal effort.

Ingredients

  • 1 pound smoked kielbasa sausage, cut into thick slices
  • 0.5 cup brown sugar
  • 4 teaspoons white vinegar
  • 1 tablespoon soy sauce
  • 0.5 cup water
  • 1 tablespoon vegetable oil

Method

  1. Place the sliced sausage, brown sugar, vinegar, and soy sauce into a large resealable bag. Toss everything together to ensure the sausage is well coated. Remove any air from the bag, seal it, and let the mixture marinate in the refrigerator for 2 hours or up to overnight.
  2. Transfer the entire contents of the bag into a large skillet. Pour in the water and add the vegetable oil. Cook the mixture, stirring frequently, until the liquid has mostly evaporated and the sausage pieces are browned, which should take about 15 minutes.
