Chicken Afritada

Ingredients

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, crushed and chopped
  • 1 onion, chopped
  • 1 cup seeded and chopped tomatoes
  • 1 (3 pound) whole chicken, cut into pieces
  • 3 cups water
  • 1 cup tomato sauce
  • 3 potatoes, quartered
  • 1 green bell pepper, seeded and cut into matchsticks
  • 1 carrot, chopped
  • salt and ground black pepper to taste

Method

  1. Warm the vegetable oil in a large wok. Cook the garlic until aromatic, about 3 minutes. Add the onion and continue to cook until it turns translucent, about 5 minutes. Mix in the chopped tomatoes, using a fork to mash them, until the skin separates from the flesh, about 5 minutes.
  2. Place the chicken pieces into the wok and cook until they take on a light brown colour, about 5 minutes. Pour in the water, cover the wok, and bring the liquid to a boil. Add the tomato sauce and let the stew simmer so the flavours can meld, about 15 minutes.
  3. Introduce the quartered potatoes to the wok and simmer until they become tender, about 10 minutes. Stir through the bell pepper matchsticks and chopped carrot, simmering until the vegetables soften, about 5 minutes. Finish by seasoning the stew with salt and ground black pepper to your taste.
