Authentic Filipino Pancit

Ingredients

  • 4 boneless chicken thighs
  • 1 (8 ounce) package dried rice noodles
  • 2 tablespoons soy-based liquid seasoning (such as Maggi®), or to taste
  • 3 tablespoons olive oil, divided
  • 1 tablespoon sesame oil
  • 3 cloves garlic, chopped
  • 1 medium onion, chopped
  • 0.5 large head cabbage, thinly sliced
  • 2 carrots, julienned
  • 1 teaspoon garlic salt

Method

  1. Boil a pot of water and cook the chicken thighs for about 30 minutes, until fully cooked. Reserve the broth and shred the chicken using two forks.
  2. Soak the dried rice noodles in the hot chicken broth for 5 to 7 minutes until soft. Rinse with cold water, drain thoroughly, then toss with 1 tablespoon olive oil, sesame oil, and the soy seasoning.
  3. Warm the rest of the olive oil in a large wok or skillet. Cook the garlic for about 1 minute until starting to colour, then add the onion for 2 minutes. Stir in the shredded chicken, cabbage, and carrots, stir-frying for 3 to 4 minutes and seasoning with garlic salt. Combine this mixture with the prepared noodles, adjust seasoning with more soy seasoning if desired, and serve.
