Authentic Filipino Pancit
This traditional Filipino pancit recipe delivers authentic taste with straightforward ingredients. It features shredded chicken thighs cooked in a savoury broth, combined with softened rice noodles and a colourful mix of stir-fried cabbage, carrots, onion, and garlic. The dish is seasoned with soy-based liquid seasoning, sesame oil, and garlic salt for its characteristic flavour. Ingredients
- 4 boneless chicken thighs
- 1 (8 ounce) package dried rice noodles
- 2 tablespoons soy-based liquid seasoning (such as Maggi®), or to taste
- 3 tablespoons olive oil, divided
- 1 tablespoon sesame oil
- 3 cloves garlic, chopped
- 1 medium onion, chopped
- 0.5 large head cabbage, thinly sliced
- 2 carrots, julienned
- 1 teaspoon garlic salt
Method
- Boil a pot of water and cook the chicken thighs for about 30 minutes, until fully cooked. Reserve the broth and shred the chicken using two forks.
- Soak the dried rice noodles in the hot chicken broth for 5 to 7 minutes until soft. Rinse with cold water, drain thoroughly, then toss with 1 tablespoon olive oil, sesame oil, and the soy seasoning.
- Warm the rest of the olive oil in a large wok or skillet. Cook the garlic for about 1 minute until starting to colour, then add the onion for 2 minutes. Stir in the shredded chicken, cabbage, and carrots, stir-frying for 3 to 4 minutes and seasoning with garlic salt. Combine this mixture with the prepared noodles, adjust seasoning with more soy seasoning if desired, and serve.
