These French macaroons offer a delightful combination of dark chocolate and fresh coconut. The recipe creates 12 treats, ideal for a buffet, afternoon tea, or a simple snack. You will whisk egg whites with sugar before folding in flour and coarsely grated coconut. After baking, the macaroons are coated in melted dark chocolate and left to set. Ingredients

  • 1 egg white
  • 200g caster sugar
  • 4 tbsp plain flour
  • 200g coarsely grated fresh coconut (about 1 coconut in total)
  • 150g bar dark chocolate chopped

Method

  1. Preheat your oven to 180C/fan 160C/gas 4. Whisk the egg white in a clean bowl until stiff peaks form. Gradually incorporate the caster sugar while continuing to whisk, until the mixture becomes thick and glossy. Sift the plain flour into the bowl, then gently fold it in along with the fresh coconut until fully combined.
  2. Place spoonfuls of the mixture onto a baking tray lined with non-stick paper. Use an 8cm pastry cutter to shape and flatten each one, working in batches if needed. Bake for 15-18 mins until the edges turn golden and the tops begin to brown. Allow them to cool on the tray before moving to a wire rack.
  3. As the macaroons cool, melt the chopped dark chocolate using a microwave or a bowl set over a pan of hot water. Let the melted chocolate cool a little. Coat the smooth base of each macaroon with chocolate. Place them in the fridge so the chocolate can set. Store any leftovers in an airtight container for up to 2 days.
