Apricot Yogurt Fool
This French-inspired apricot yogurt fool is a delightful and simple dessert. Ripe apricots are gently stewed with orange juice, sugar, and cinnamon sticks until soft. The cooked fruit is then folded into Greek yogurt flavoured with fresh lemon zest. The result is a beautifully layered treat, perfect for a light finish to a meal or an afternoon indulgence. It requires just 20 minutes to prepare and serves four.
Ingredients
- 600g ripe apricots halved and stoned
- juice of 1 large orange
- 50g caster sugar
- 2 cinnamon sticks broken
- 500g tub of Greek yogurt
- zest of 1 lemon
Method
- Combine the apricots, orange juice, sugar and broken cinnamon sticks in a saucepan. Cover the pan and cook gently for about 15 mins, until the apricots become very soft. Take out the cinnamon sticks and allow the mixture to cool.
- Transfer the yogurt to a bowl and mix through the lemon zest. Gently fold in the majority of the cooled apricot mixture. Divide the fool between 4 glasses and finish with the rest of the fruit and any remaining juices.
