Butter Bean Pâté with Melba Toast
Prepare this simple French-inspired pâté in only 15 minutes, making it a fantastic last-minute starter. The creamy blend of butter beans, soured cream, and fresh herbs is served with crisp, golden melba toast for a delightful combination of textures. It's perfect for a buffet, canapé selection, or a light lunch.
Ingredients
- 1 tsp olive oil
- 1 shallot finely chopped
- 1 garlic clove finely chopped
- 400g can butter bean drained
- 4 tbsp soured cream
- 2 tbsp chopped fresh parsley plus sprigs to garnish
- 4 thin slices white bread
Method
- Warm the oil in a pan and cook the shallot and garlic for 5 mins until soft. Move them to a large bowl. Add the butter beans and mash to a coarse purée. Mix through the soured cream, parsley and seasoning. Cover and place in the fridge until needed.
- While the pâté chills, put the bread slices under a medium grill. Toast them lightly on both sides until golden. Remove the crusts and carefully slice each piece in half through the middle with a sharp knife. Place these halves, untoasted-side facing up, under a low grill until they curl and become crisp and golden. Serve alongside the pâté, garnished with a parsley sprig.
