Butter Bean Pâté with Melba Toast

Ingredients

  • 1 tsp olive oil
  • 1 shallot finely chopped
  • 1 garlic clove finely chopped
  • 400g can butter bean drained
  • 4 tbsp soured cream
  • 2 tbsp chopped fresh parsley plus sprigs to garnish
  • 4 thin slices white bread

Method

  1. Warm the oil in a pan and cook the shallot and garlic for 5 mins until soft. Move them to a large bowl. Add the butter beans and mash to a coarse purée. Mix through the soured cream, parsley and seasoning. Cover and place in the fridge until needed.
  2. While the pâté chills, put the bread slices under a medium grill. Toast them lightly on both sides until golden. Remove the crusts and carefully slice each piece in half through the middle with a sharp knife. Place these halves, untoasted-side facing up, under a low grill until they curl and become crisp and golden. Serve alongside the pâté, garnished with a parsley sprig.
