These vegetarian patties combine cooked quinoa and broccoli with cheese and breadcrumbs for a satisfying texture. They are pan-fried until golden and crisp on the outside while remaining soft inside. The recipe is adaptable, allowing you to use your preferred cheese or add other vegetables. Perfect for a light lunch or a hearty side dish, they are ready in about 45 minutes.

Cheesy Quinoa and Broccoli Patties

Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 5 large broccoli florets
  • 1 small onion, diced (I like sweet red onion)
  • 1/4 cup breadcrumbs
  • 1/4 cup shredded cheese (cheddar, parmesan, whatever you like)
  • 1 large egg
  • salt
  • pepper
  • olive oil

Method

  1. Prepare the quinoa by cooking it with 1 cup of water as per the packet instructions, which typically involves bringing it to a boil and then simmering, covered, for about 15 minutes until the water is absorbed.
  2. Transfer the cooked quinoa to a plate and allow it to cool fully. In a separate pan, cook the diced onion until soft and translucent, then set it aside to cool. Lightly cook the broccoli florets until just tender, let them cool, then chop them into small pieces.
  3. Place the cooled quinoa, broccoli, onion, breadcrumbs, and shredded cheese into a large mixing bowl. Combine everything thoroughly, then mix in the large egg to bind the mixture, which should be moist enough to hold together.
  4. Add a little olive oil to a frying pan and heat it. Form the mixture into patties, using roughly 1/4 cup for each one, shaping them into balls and flattening slightly. Cook each patty for about 7 - 8 minutes per side until a golden crust forms.
  5. Allow the cooked patties to rest for a couple of minutes before serving.
