Cheesy Grilled Bread
This cheesy grilled bread is an ideal accompaniment to Italian meals or a satisfying starter. A flavourful butter mixture, blended with sun-dried tomatoes, pesto and garlic, is spread over toasted Italian bread and topped with provolone cheese. It is then grilled until the cheese melts perfectly. The whole process takes about 25 minutes, yielding 8 generous servings of warm, savoury bread.
Ingredients
- 0.5 cup unsalted butter, softened
- 0.25 cup sun-dried tomatoes packed in oil, drained
- 2 tablespoons pesto
- 1 clove garlic
- 0.25 teaspoon salt
- 0.125 teaspoon ground black pepper
- 1.5 cups shredded provolone cheese, divided
- 1 loaf Italian bread, sliced in half lengthwise
Method
- Prepare your outdoor grill for medium heat and lightly oil the cooking grate.
- Place the softened butter, drained sun-dried tomatoes, pesto, garlic clove, salt, and black pepper into a food processor. Pulse the mixture until it is fully combined and the tomatoes are chopped. Transfer this to a bowl and mix in 1 cup of the shredded provolone cheese.
- Toast the bread halves on the preheated grill for about 1 1/2 minutes. Evenly spread the butter mixture onto the cut sides of both bread halves, then sprinkle the remaining cheese over the top. Place the bread, cut-side up, over indirect heat, cover the grill, and cook until the topping melts, which should take 8 to 10 minutes. Allow it to cool for a moment before slicing with a serrated knife. Serve while still warm.
