These homemade spring rolls are cooked in an air fryer for a wonderfully crisp finish. The filling combines ground beef with softened rice noodles, mixed vegetables, onion and garlic, all seasoned with soy sauce. Wrapped in egg roll wrappers and brushed with oil, they cook to a perfect golden brown. This recipe yields about 20 pieces, ideal for sharing as a starter or serving as a main course.

Air Fryer Spring Rolls

Ingredients

  • 2 ounces dried rice noodles
  • 1 tablespoon sesame oil
  • 7 ounces ground beef
  • 1 cup frozen mixed vegetables
  • 1 small onion, diced
  • 3 cloves garlic, crushed
  • 1 teaspoon soy sauce
  • 1 (16 ounce) package egg roll wrappers
  • 1 tablespoon vegetable oil, or to taste

Method

  1. Prepare all of your ingredients.
  2. Place the dried rice noodles in a bowl of hot water to soften for about 5 minutes. Once soft, cut them into shorter pieces.
  3. Warm the sesame oil in a wok. Cook the ground beef, frozen mixed vegetables, diced onion and crushed garlic until the beef is nearly browned, which should take about 6 minutes. Take the wok off the heat.
  4. Mix the softened noodles into the filling and allow it to sit so the noodles absorb the juices.
  5. Stir the soy sauce into the filling mixture. Set your air fryer to preheat to 350 degrees F (175 degrees C).
  6. Place a single egg roll wrapper on your work surface. Spoon a diagonal line of the filling onto it.
  7. Fold the top corner of the wrapper over the filling, then fold the two side corners in. Brush the remaining corner with cold water and roll it up to seal. Continue with the rest of the wrappers and filling.
  8. Lightly coat the outside of each assembled spring roll with vegetable oil.
  9. Place a batch of spring rolls in the air fryer basket. Cook them until they are crisp and lightly browned, for about 8 minutes. Cook the remaining spring rolls in batches.
