This savoury garlic bread is a flavourful accompaniment to any Italian meal. A rich butter mixture infused with garlic and oregano is spread over slices of Italian bread, then toasted under the broiler. It's finished with a generous topping of mozzarella cheese that melts and browns beautifully. Toasted Garlic Bread

Ingredients

  • 1 (1 pound) loaf Italian bread
  • 5 tablespoons butter, softened
  • 3 cloves garlic, crushed
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Method

  1. Collect the required ingredients.
  2. Position an oven rack roughly 6 inches from the broiler element and switch the oven to broil. Slice the loaf into ten pieces, each about 1-inch thick.
  3. In a bowl, combine the softened butter, crushed garlic, olive oil, oregano, salt, and pepper. Spread this mixture onto one side of every bread slice. Place the slices with the buttered side facing up on a baking tray in a single layer.
  4. Broil the bread until it begins to turn golden, watching it carefully to prevent burning, for approximately 3 minutes.
  5. Sprinkle the shredded mozzarella cheese over the toasted bread and place it back under the broiler. Broil until the cheese has melted and developed light golden spots, about 2 minutes.
