Broccoli, Peanut and Sweet Red Pepper Stir-fry
This vibrant vegetable stir-fry was created as a spontaneous side dish. It combines crisp broccoli and sweet red pepper with fragrant toasted peanuts, all cooked quickly in a wok. Ingredients
- 2 stalks broccoli, washed and peeled
- 1 large sweet red pepper, cleaned and seeded
- 1 cup roasted peanuts
- 3 tablespoons peanut oil
Method
- Slice the broccoli and red pepper into pieces roughly 1" square, keeping the broccoli as individual florets.
- Maintain a medium heat setting for the entire cooking process.
- Warm the peanut oil in a wok or suitable stir-fry pan, then toast the peanuts until they turn golden and release their aroma.
- Take the peanuts out of the pan and reserve them for later.
- Introduce the broccoli to the pan and stir-fry it for about 5 minutes.
- Place the sweet red pepper pieces into the wok.
- Keep stir-frying until the broccoli and pepper are cooked to your preferred level of tenderness.
- Return the reserved peanuts to the pan, toss everything together and warm through if needed.
- Transfer the finished stir-fry to a serving dish and present it straight away.
- Add your chosen seasonings according to taste.
