5-Star Whoopie Pies
These classic whoopie pies feature soft, cocoa-infused cookies baked from a simple drop batter. The cookies are paired with a sweet and fluffy filling made from marshmallow cream and buttercream. Ingredients
- 2 cups flour
- 1 cup sugar
- 1 egg
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cocoa powder
- 1/2 cup cooking oil
- 1 teaspoon vanilla
- 1 cup milk
- 1/2 cup butter
- 1/4 cup Crisco
- 1 cup confectioners' sugar
- 1 teaspoon vanilla
- 8 ounces marshmallow cream
- 1 tablespoon milk
Method
- For the cookies, sift the flour, sugar, baking soda, baking powder, salt and cocoa powder into a mixing bowl.
- Add the egg, cooking oil, vanilla and milk to the dry ingredients and mix thoroughly until combined.
- Drop spoonfuls of the batter onto a cookie sheet that has not been greased.
- Bake the cookies at 425 for approximately 7 minutes.
- To prepare the filling, beat the butter, Crisco, confectioners' sugar, vanilla, marshmallow cream and milk together until smooth.
- Use the filling to sandwich the cooled cookies together as you like.
