These delightful soft and chewy ginger cookies are a fantastic low fat treat, ideal for an afternoon snack or a lunch box addition. The recipe uses a blend of whole wheat and white flour, sweetened with brown sugar and molasses, and gets its moist texture from unsweetened applesauce. They bake quickly and are often enjoyed too fast to consider turning them into ice cream sandwiches. You'll get about 22 servings from one batch.
