These oatmeal raisin cookies are a flavourful twist on a classic, adapted from a popular oat recipe. Infused with Chinese five spice and ground ginger, they offer a more complex taste than traditional versions. Using a small ice cream scoop ensures uniform size for even baking. Ingredients
- 1/2 lb sweet unsalted butter, room temperature
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla
- 1 1/2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon Chinese five spice powder
- 1 -2 tablespoon ground ginger, depending on taste
- 1/2 teaspoon salt
- 3 cups quick oats
- 1 cup raisins
Method
- Heat the oven to 350 degrees.
- Cream the butter with both sugars using a medium speed until light and fluffy.
- Incorporate the eggs and vanilla, mixing thoroughly.
- In another bowl, combine the flour, baking soda, Chinese five spice powder, ginger and salt with a whisk.
- Blend the dry flour mixture into the creamed butter mixture.
- Fold in the quick oats and raisins until distributed.
- Place heaping tablespoonfuls of dough onto an ungreased cookie sheet.
- Bake the cookies for 10 to 12 minutes.
- Allow them to cool for a short time before transferring from the sheet.
