3x Chocolate Cookies
These rich and wonderful cookies are almost like a sophisticated candy. The recipe, sourced from a well-used old magazine, involves melting two types of chocolate before combining with the batter. The result is a decadent treat studded with chocolate chips and finished with a nut half on top. It yields about 20 cookies and is well worth the effort.
Ingredients
- 2 tablespoons flour, sifted
- 1/8 teaspoon baking powder
- 1 pinch salt
- 1 ounce unsweetened chocolate
- 3 ounces semisweet chocolate
- 1 tablespoon butter
- 1/3 cup light brown sugar
- 1/2 teaspoon vanilla
- 1 tablespoon water
- 1 large egg
- 3/4 cup chocolate chips
- pecans or walnut halves
Method
- Prepare two cookie sheets by lining them with foil.
- Sift the flour together with the baking powder and salt.
- In the top of a double boiler, combine the unsweetened chocolate, semisweet chocolate and butter. cover for a few minutes until the chocolate starts to melt, then uncover and stir until fully melted.
- Take the mixture off the heat and let it cool for 2-3 minutes.
- Stir in the brown sugar, vanilla, water and egg until the mixture is smooth.
- Add the sifted dry ingredients and stir until they are fully incorporated.
- Fold the chocolate chips into the batter.
- Drop rounded teaspoonfuls of dough onto the prepared foil, spacing them about 1 1/2 inches apart.
- Press a pecan or walnut half onto the top of each cookie.
- Bake the cookies at 350 for 12-13 minutes.
- Once baked, slide the foil off the baking sheets and let the cookies rest on the foil for a few minutes.
- Transfer the cookies to cooling racks to finish cooling completely.
