3-Ingredient Peanut Butter Cookies
These wonderfully simple cookies require only three essential ingredients. For a richer flavour, you can use a mix of white and brown sugar. The optional addition of chocolate chips creates a delightful four-ingredient version. The dough comes together quickly and bakes in just 6 to 8 minutes, yielding about two dozen delicate, criss-cross patterned treats.
Ingredients
- 1 cup peanut butter (any kind)
- 1 cup sugar
- 1 egg, large
- 1/2 cup chocolate chips (optional)
Method
- Preheat your oven to 350.
- Mix the peanut butter, sugar and egg together thoroughly until you have a smooth blend.
- Should you wish to include them, fold the chocolate chips into the dough at this stage.
- Take roughly a tablespoon of dough and roll it between your hands to form a small ball.
- Arrange 12 dough balls on a prepared baking sheet, leaving space between them. Press down on each ball with a fork to flatten it, creating a classic criss-cross design.
- Bake the cookies for about 6-8 minutes, until they take on a light golden colour.
- Take the baking sheet from the oven and allow the cookies to rest on it for a few minutes. They are fragile when warm and may break if moved too early.
- Transfer the cooled cookies to a wire rack to finish cooling completely.
