25-clove Garlic Soup
This creamy kosher soup gets its deep, mellow flavour from a generous 25 cloves of garlic, simmered with leek and potatoes in a herbed vegetable broth. The mixture is blended until smooth and finished with creme fraiche for a velvety texture. It's a simple, comforting dish that takes just 55 minutes to prepare from start to finish.
Ingredients
- 25 cloves garlic
- 1 large leek
- 8 potatoes
- 6 cups vegetable broth
- 3 tablespoons tomato paste
- 1/2 teaspoon cumin
- 1/2 teaspoon thyme
- 1 teaspoon salt
- 1/2 cup creme fraiche
Method
- Peel the garlic cloves.
- Chop the leek into large pieces.
- Peel the potatoes and cut them into chunks.
- Bring the vegetable broth to a boil with the tomato paste, cumin, thyme and salt.
- Place the garlic, leek and potato chunks into the boiling broth.
- Cover the pot and let it simmer for approximately 40 minutes.
- Puree the cooked soup using a blender or by hand with a stick blender.
- Stir in the creme fraiche and warm the soup through for 1 minute.
