2 Way Baked Kumara (White Flesh Sweet Potato)
This recipe highlights the unique white-fleshed kumara, sometimes sold as bush bok sweet potato. It has a distinctive chestnut-like flavour and a skin with purplish edges. The simple method involves baking the whole tuber until tender, then serving it one of two classic ways: either savoury with butter, salt, and pepper, or as a sweet snack with butter, condensed milk, and cinnamon. Ingredients
- 1 kumara (the size of a regular baking potato)
- 10 -25 g butter
- salt
- pepper
Method
- Preheat your oven to 200C/425°F.
- Pierce the kumara skin with a fork and bake it for around 45mins to an hour, wrapping it in foil if you prefer a softer skin.
- Once cooked, split the kumara open and spread it generously with butter, salt, and freshly ground black pepper.
- Alternatively, for a sweet version, split the baked kumara and top it with butter, condensed milk, and a sprinkle of cinnamon.
