1776 Molasses Dumplings
This recipe offers a taste of history with these traditional Chinese dessert dumplings from 1776. The simple dough is mixed, cut, and fried before being finished in a kettle of boiling molasses. The process creates a unique sweet and savoury treat that is then drained before serving. It yields approximately 24 servings and can be prepared in about 10 minutes.
Ingredients
- 3/4 cup milk
- 2 cups flour
- 2 teaspoons fat
- 1 teaspoon salt
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
Method
- Combine the dumpling ingredients and roll the dough out to a thickness of one inch. Use a small cutter to shape the dumplings.
- Carefully place 2 or 3 dumplings at a time into the hot fat to fry.
- Prepare a separate pot of boiling molasses. Once the dumplings are fried, transfer them directly into this boiling molasses.
- Take the dumplings out of the molasses and allow them to drain on a suitable surface.
