Salted Mint Lassi

This savoury and herbaceous lassi is an ideal partner for Indian cuisine. A hint of chaat masala introduces a tangy depth, while black pepper and Kashmiri red chilli powder provide a gentle warmth. Blending fresh mint and cilantro creates a vibrant base, which is then combined with buttermilk and yogurt for a creamy, cooling beverage that is both quick to prepare and wonderfully refreshing.

Salted Mint Lassi

Ingredients

  • 1/2 bunch mint (about 2 ounces; 60g)
  • 1/2 bunch cilantro (about 2 ounces; 60g)
  • 1 quart (940ml) buttermilk
  • 2 cups yogurt, not strained (16 ounces; 450g)
  • 2 teaspoons chaat masala
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon Kashmiri red chile powder
  • 2 teaspoons (10g) kosher salt; for table salt, use about half as much by volume or the same weight

Method

  1. Place the mint, cilantro and 1/3 cup (78ml) water into a blender and process until completely smooth.
  2. Transfer the herb purée to a large bowl and whisk in the buttermilk, yogurt, 2 teaspoons chaat masala, 1/4 teaspoon black pepper, 3/4 teaspoon Kashmiri red chile powder and 2 teaspoons salt. Taste and add more seasoning if you wish.
  3. Pour the lassi over ice to serve straight away. Any leftovers can be stored in the fridge for three days.
