Salmon, Pea and Potato Purée

Ingredients

  • 1 medium baking potato (about 225g)
  • 1 salmon fillet (about 115g)
  • 50g peas
  • splash of milk or knob of butter

Method

  1. Set your oven to 200C/180C fan/gas 6. Enclose the potato in foil, place it on a baking tray and roast for 1 hour 15 mins. Wrap the salmon fillet in foil, place it on the same tray and cook for a further 10 mins or until the fish is opaque and fully cooked.
  2. While the potato and fish are roasting, boil the peas in water for 3 mins or until they become tender. Drain the cooked peas.
  3. After cooking, cut the potato in half and remove the soft interior. Break the salmon into flakes, ensuring you discard the skin and check for any bones.
  4. Process the peas, potato flesh and flaked salmon together in a food processor. You can add a splash of milk or a knob of butter at this stage to adjust the consistency of the purée. Serve one portion immediately and spoon the rest into small containers for freezing.
