Sweetcorn and Spinach Fritters for Toddlers

Ingredients

  • 1 x small can no-salt sweetcorn drained
  • small handful baby spinach leaf
  • 1 small garlic clove crushed
  • 1 spring onion chopped
  • 50g plain flour
  • 1/2 tsp baking powder
  • 1 egg
  • 50ml milk
  • 1 tsp rapeseed oil for frying

Method

  1. Place all ingredients apart from the oil into a food processor and pulse until the mixture is fairly smooth but not completely puréed.
  2. Add a small amount of oil to a frying pan and heat it. Spoon four portions of the batter into the pan, spacing them apart. Fry for just under 1 min on each side until they turn a light golden colour. Use a spatula to press down on each fritter when you turn it to help it cook through evenly. Cook the mixture in three batches, transferring the cooked fritters to a plate lined with kitchen paper. Serve while warm.
  3. Any leftover fritters can be frozen. Arrange them on a baking sheet to freeze initially, then move them to a freezer bag once solid. To reheat from frozen, place in an oven preheated to 180C/160fan/gas 4 for around 10 mins until thoroughly hot. Let them cool to a lukewarm temperature before serving.
