Sweetcorn and Spinach Fritters for Toddlers
These nutritious fritters combine sweetcorn and spinach for a vitamin C boost, with egg providing protein. They are an ideal finger food for baby-led weaning, making them a great family-friendly and healthy recipe option. The mixture is quickly blended and fried, resulting in a batch of 12 fritters suitable for toddler portions or smaller servings.
Ingredients
- 1 x small can no-salt sweetcorn drained
- small handful baby spinach leaf
- 1 small garlic clove crushed
- 1 spring onion chopped
- 50g plain flour
- 1/2 tsp baking powder
- 1 egg
- 50ml milk
- 1 tsp rapeseed oil for frying
Method
- Place all ingredients apart from the oil into a food processor and pulse until the mixture is fairly smooth but not completely puréed.
- Add a small amount of oil to a frying pan and heat it. Spoon four portions of the batter into the pan, spacing them apart. Fry for just under 1 min on each side until they turn a light golden colour. Use a spatula to press down on each fritter when you turn it to help it cook through evenly. Cook the mixture in three batches, transferring the cooked fritters to a plate lined with kitchen paper. Serve while warm.
- Any leftover fritters can be frozen. Arrange them on a baking sheet to freeze initially, then move them to a freezer bag once solid. To reheat from frozen, place in an oven preheated to 180C/160fan/gas 4 for around 10 mins until thoroughly hot. Let them cool to a lukewarm temperature before serving.
