Carrot and Red Lentil Purée

This wholesome purée combines carrots and red lentils, both excellent sources of nutrients for growing babies. It is designed for infants who are ready to progress from very soft foods to meals with a bit more substance. The recipe is simple to prepare, taking about 25 minutes from start to finish. You can make a batch and freeze portions for future meals, adding optional yogurt for a creamier texture if desired.

Carrot and Red Lentil Purée

Ingredients

  • small knob of butter
  • 1/4 tsp ground coriander (optional)
  • 50g red split lentils thoroughly rinsed
  • 4 carrots (around 350g carrots), peeled and cut into chunks
  • 1-2 tbsp yogurt (optional)

Method

  1. Melt the butter in a saucepan, then cook the optional coriander for 1 min. Add the rinsed lentils and carrot chunks, then cover them with just enough water.
  2. Once boiling, cook for 10 mins before reducing to a simmer for a further 5 mins or until the carrots and lentils are completely soft.
  3. Drain the mixture and place it into a food processor. Blend until you achieve a smooth purée, adding the optional yogurt if using. Serve one portion immediately and freeze the remainder in small containers.
