Spicy Roast Turkey

Ingredients

  • 1 -1 1/2 cup mayonnaise
  • 2 tablespoons paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 (14 lb) turkey

Method

  1. Combine the paprika, cayenne pepper, black pepper, salt, onion powder, oregano, thyme, and garlic powder with the mayonnaise, mixing until fully incorporated.
  2. Fold the wings back and apply the spicy mayonnaise mixture generously over the entire surface of the turkey, working it into the skin.
  3. Ensure the paste is spread inside the cavity, over the exterior, and beneath the skin covering the breast meat.
  4. Place the turkey on the lowest oven rack and roast at 500°F for 30 minutes.
  5. Take the turkey out and shield the breast area with a double thickness of heavy-duty aluminium foil shaped into a triangle, leaving the legs exposed. Insert a meat thermometer into the thickest section of the breast and return it to the oven.
  6. Lower the oven temperature setting to 350°F.
  7. Continue roasting until the thermometer registers 161°F (a 14 to 16 pound bird typically requires a total roasting time of 2 to 2 1/2 hours).
  8. Take the cooked turkey from the oven, cover it loosely, and allow it to rest for at least 15 minutes prior to slicing.
