Apple Sage Roast Turkey
This recipe presents a classic roast turkey elevated with the aromatic flavours of fresh sage and sweet apple. The bird is prepared with a cider glaze and stuffed with apple wedges, resulting in a beautifully presented and flavourful main dish. It is an ideal centrepiece for a celebratory meal, and the pan juices are perfect for creating a delicious accompanying gravy. The total preparation and cooking time is approximately 200 minutes.
Ingredients
- 1/3 cup apple cider, plus
- 2 tablespoons apple cider
- 1/3 cup apple jelly
- 1/4 cup butter
- 1 (12 lb) fresh or thawed frozen turkey
- salt and pepper, to taste
- 1 bunch fresh sage
- 4 large apples, cored,and cut into wedges
- apple, sliced,for garnish
Method
- Combine 1/3 cup apple cider, the apple jelly, and butter in a small saucepan, stirring until the mixture becomes smooth and fully melted.
- Take the saucepan off the heat.
- Coat the entire turkey, inside and out, with the 2 tablespoons of apple cider, then season generously with salt and pepper.
- Carefully separate the skin from the breast meat by sliding your fingers between the two layers.
- Insert fresh sage leaves beneath the loosened skin, then smooth the skin back down over them.
- Fill the neck and body cavities loosely with the apple wedges and extra sage leaves, remembering to save a few for decoration.
- Secure both openings of the turkey using skewers.
- Truss the bird and coat the outside with the prepared cider glaze.
- Roast the turkey based on its weight.
- Present the roasted turkey decorated with the reserved sage leaves and extra apple slices.
