Spicy Garlic Shrimp
This Korean dish features shrimp coated in a crisp batter and tossed in a vibrant, spicy sauce. The sauce is built from chili oil, dried peppers, fresh vegetables, garlic, and a blend of soy, vinegar, and sugar. The final result is a glossy, flavourful coating for the shrimp. You can control the spiciness by selecting milder or hotter peppers. It takes about 75 minutes to prepare and serves two people.
Ingredients
- 1 lb shrimp (shelled and deveined)
- 1 egg white
- 1 cup cornstarch
- 2 tablespoons water
- 2 tablespoons chili oil
- 4 dried red peppers
- 3 tablespoons onions (finely chopped)
- 2 red peppers (finely chopped)
- 2 green peppers (finely chopped)
- 1 tablespoon garlic
- 1/2 tablespoon soy sauce
- 1/2 tablespoon rice vinegar
- 1/2 tablespoon sugar
- 1 tablespoon ginger juice
- 1 pinch salt
- 1/4 cup water
- 1/2 tablespoon cornstarch
Method
- Combine the shrimp with the egg white, cornstarch, and 2 tablespoons of water to create a thick batter. Fry the shrimp lightly.
- Heat the chili oil in a pan and add the dried red peppers. Introduce the chopped onions, red peppers, green peppers, garlic, soy sauce, rice vinegar, sugar, ginger juice, and salt. Cook this for 1 or 2 minutes.
- Whisk together the 1/4 cup of water and the 1/2 tablespoon of cornstarch. Pour this mixture into the pan and stir thoroughly.
- Place the fried shrimp into the pan with the sauce and toss until they are fully coated.
