Spicy Korean Pork Stir Fry
This Korean pork stir fry features thin slices of pork shoulder marinated in a spicy and savoury paste made with gochujang, pear, and aromatics. Quickly cooked in a hot pan, it results in tender, caramelised meat. The dish is traditionally served over steamed rice and finished with a sprinkle of sesame seeds and fresh scallions for a complete meal.
Ingredients
- 1 lb boneless pork shoulder
- 1 small pear, grated
- 1/2 medium onion, grated
- 1/2 teaspoon fresh ginger, minced
- 1 garlic clove, crushed
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 2 teaspoons sesame oil
- 3 tablespoons gochujang
- 1 tablespoon oil
- 1 garlic clove, minced
- 1 onion, halved and sliced
- 1 scallion, sliced, garnish
- 2 tablespoons sesame seeds, for garnish
- 3 cups cooked rice
Method
- Slice the pork shoulder into thin pieces. In a separate bowl, mix the grated pear, grated onion, minced ginger, crushed garlic, soy sauce, brown sugar, sesame oil, and gochujang to create the marinade. Add the pork slices to this mixture and allow them to marinate for 30 minutes, or you can leave them overnight.
- Place a large non-stick skillet on the heat and add the oil. Once hot, put in the minced garlic and sliced onion, cooking them for 2 minutes until they soften. Introduce the marinated pork to the pan and cook for 5 minutes, letting it become dark golden and caramelised while ensuring it is cooked through.
- Dish up the stir fry straight away alongside the cooked rice. Finish by scattering over the sliced scallion and sesame seeds as a garnish.
