Ingredients

  • 8 ounces udon noodles (fresh or frozen)
  • 1 chicken breast
  • 1 cup onion
  • 1 cup cabbage
  • 1 cup zucchini
  • 1/2 cup carrot
  • 2 green onions
  • 6 cups water
  • 4 garlic cloves
  • 1 green onion
  • 1/2 teaspoon peppercorn
  • 1/8 onion
  • 1 1/2 tablespoons red pepper powder
  • 1 tablespoon hot pepper oil
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon garlic, minced
  • 1/8 teaspoon salt

Method

  1. Prepare one cup of onion, one cup of cabbage, one cup of zucchini, 1/2 cup of carrot, and two green onions by chopping them.
  2. Place 6 cups of water in a pot to create the broth. Add 4 garlic cloves, 1 green onion, 1/2 teaspoon peppercorn, and 1/8 onion. Introduce the chicken breast and bring to a boil, cooking for 25 minutes.
  3. Take the chicken out once cooked and set it aside. Pass the broth through a strainer to remove the solids, keeping the liquid. Pull the chicken breast apart into shreds.
  4. Prepare the udon noodles according to the package directions.
  5. Bring the strained broth back to a boil. Stir in 1 1/2 tablespoons red pepper powder, 1 tablespoon hot pepper oil, 2 tablespoons soy sauce, 1 teaspoon sesame oil, 1 tablespoon garlic, minced, and 1/8 teaspoon salt. Add the shredded chicken and the chopped vegetables, reserving the green onions. Once the soup returns to a boil, let it cook for 5 more minutes.
  6. Drain the cooked noodles and rinse them briefly under cold water. Add the noodles and the reserved green onions to the soup pot. Cook everything together for 2 more minutes before serving.
