Spicy Beef and Sausage Chili

Ingredients

  • 1 lb good ground beef
  • 1 (1 lb) package hot Italian sausage, removed from casing
  • 1 1/2 large onions, diced
  • 7 garlic cloves, rough chopped
  • 1/8 cup chili powder
  • 4 tablespoons ground cumin
  • 2 tablespoons crushed red pepper flakes (more or less to taste)
  • 1/4 cup chicken stock
  • 1 tablespoon cayenne pepper
  • 1 (16 ounce) can diced tomatoes
  • 1 (4 ounce) can tomato sauce
  • shredded cheddar cheese
  • salt

Method

  1. Brown the ground beef in a large pot or Dutch oven.
  2. In a separate skillet, crumble the sausage into 1 inch pieces and brown it with 1 diced onion and the chopped garlic.
  3. Once the beef is browned, pour in the chicken stock and add all the spices, stirring to combine well.
  4. Add the browned sausage, onions, and garlic from the skillet to the pot and mix everything together.
  5. Stir in the canned diced tomatoes and tomato sauce.
  6. Allow the chilli to simmer on low until you are ready to serve, noting that a longer cooking time increases both the spiciness and the depth of flavour.
  7. Serve the chilli topped with shredded cheddar cheese and the reserved diced onions.
