Spicy Beef and Sausage Chili
This robust chilli combines ground beef and hot Italian sausage for a deeply savoury base. Onions and garlic are browned with the sausage, then everything is united in a pot with tomatoes, tomato sauce, and a bold blend of spices including chilli powder, cumin, and cayenne. A long, slow simmer develops a rich, spicy flavour. Serve it topped with shredded cheddar cheese and the remaining diced onions for a satisfying dish.
Ingredients
- 1 lb good ground beef
- 1 (1 lb) package hot Italian sausage, removed from casing
- 1 1/2 large onions, diced
- 7 garlic cloves, rough chopped
- 1/8 cup chili powder
- 4 tablespoons ground cumin
- 2 tablespoons crushed red pepper flakes (more or less to taste)
- 1/4 cup chicken stock
- 1 tablespoon cayenne pepper
- 1 (16 ounce) can diced tomatoes
- 1 (4 ounce) can tomato sauce

Method
- Brown the ground beef in a large pot or Dutch oven.
- In a separate skillet, crumble the sausage into 1 inch pieces and brown it with 1 diced onion and the chopped garlic.
- Once the beef is browned, pour in the chicken stock and add all the spices, stirring to combine well.
- Add the browned sausage, onions, and garlic from the skillet to the pot and mix everything together.
- Stir in the canned diced tomatoes and tomato sauce.
- Allow the chilli to simmer on low until you are ready to serve, noting that a longer cooking time increases both the spiciness and the depth of flavour.
- Serve the chilli topped with shredded cheddar cheese and the reserved diced onions.
