Spanish Marinated Olives
This Spanish tapas recipe transforms good quality olives with a vibrant marinade. Sliced garlic, julienned orange and lemon zest, fennel seeds, and fresh rosemary infuse the olives with aromatic, spicy, and fruity notes. The mixture is combined with olive oil, lemon juice, and red pepper flakes, then left to marinate for a full day to develop its complex flavours. It yields eight servings and is wonderfully simple to prepare.
Ingredients
- 1 lb assorted good imported olive (Kalamata, Nicoise, Spanish, Cracked Green, etc.)
- 8 garlic cloves, sliced
- 1/2 orange, zest of, cut into 1/2 inch julienne
- 1/2 lemon, zest of, cut into 1/2 inch julienne
- 2 tablespoons fennel seeds
- 1 tablespoon fresh rosemary
- 4 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 1/2 teaspoon red pepper flakes
Method
- Place all of the listed ingredients into a large mixing bowl.
- Allow the mixture to marinate at room temperature for a minimum of 24 hours.
