Salmon With Tomatoes
This savoury Spanish recipe features salmon steaks baked in a flavourful tomato sauce. The sauce is made by sauteing onions, garlic and hot pepper, then simmering with canned tomatoes, white wine and herbs. The fish is placed in a casserole, covered with the sauce, and baked until cooked through. It is a popular dish from Andalusia and pairs well with rice and a green vegetable.
Ingredients
- 1 1/2 lbs salmon steaks
- 4 tablespoons oil
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 small hot pepper, finely chopped
- 1 (19 ounce) can tomatoes
- 4 tablespoons chopped parsley
- 1/2 cup dry white wine
- 1 1/2 teaspoons salt
- 1 teaspoon oregano
- 1/2 teaspoon pepper
- 1/2 teaspoon cumin
Method
- Heat the oil in a medium frying pan and cook the chopped onions, minced garlic and finely chopped hot pepper for about 10 minutes.
- Stir in all the remaining ingredients except for the salmon, bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
- Arrange the salmon steaks in a greased medium sized casserole dish.
- Pour the prepared tomato sauce over the fish and bake, uncovered, in a preheated 350F oven for 30 minutes.
