This savoury Spanish recipe features salmon steaks baked in a flavourful tomato sauce. The sauce is made by sauteing onions, garlic and hot pepper, then simmering with canned tomatoes, white wine and herbs. The fish is placed in a casserole, covered with the sauce, and baked until cooked through. It is a popular dish from Andalusia and pairs well with rice and a green vegetable.

Salmon With Tomatoes

Ingredients

  • 1 1/2 lbs salmon steaks
  • 4 tablespoons oil
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 1 small hot pepper, finely chopped
  • 1 (19 ounce) can tomatoes
  • 4 tablespoons chopped parsley
  • 1/2 cup dry white wine
  • 1 1/2 teaspoons salt
  • 1 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin

Method

  1. Heat the oil in a medium frying pan and cook the chopped onions, minced garlic and finely chopped hot pepper for about 10 minutes.
  2. Stir in all the remaining ingredients except for the salmon, bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
  3. Arrange the salmon steaks in a greased medium sized casserole dish.
  4. Pour the prepared tomato sauce over the fish and bake, uncovered, in a preheated 350F oven for 30 minutes.
