Grilled Spiced Lamb Chops

Ingredients

  • 1 1/2 tablespoons ground coriander
  • 1 1/2 tablespoons ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper
  • 8 lamb loin chops
  • fresh ground sea salt
  • olive oil, for brushing
  • 2 pints cherry tomatoes
  • 1 tablespoon butter

Method

  1. Combine all the ground spices in a bowl and set the mixture aside.
  2. Preheat your grill, then adjust the temperature.
  3. Season the lamb loin chops with sea salt, massaging it in. Apply 1 tsp of the prepared spice mix to each chop, rubbing it over the surface.
  4. Allow the seasoned chops to rest for 15 minutes.
