Grilled Spiced Lamb Chops

Ingredients
- 1 1/2 tablespoons ground coriander
- 1 1/2 tablespoons ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon fresh ground black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper
- 8 lamb loin chops
- fresh ground sea salt
- olive oil, for brushing
- 2 pints cherry tomatoes
- 1 tablespoon butter
Method
- Combine all the ground spices in a bowl and set the mixture aside.
- Preheat your grill, then adjust the temperature.
- Season the lamb loin chops with sea salt, massaging it in. Apply 1 tsp of the prepared spice mix to each chop, rubbing it over the surface.
- Allow the seasoned chops to rest for 15 minutes.
- Lightly brush the chops with olive oil and grill them for 6-8 minutes on each side.
- In a separate bowl, coat the cherry tomatoes with the remaining spice blend.
