Bryan's Chocolate Lamb Chili
This unique chilli recipe blends lean ground lamb with a medley of spices and a surprising touch of unsweetened cocoa powder. It's a hearty, warming dish that simmers together with tomatoes and red beans. Serve it in bowls with classic garnishes like sour cream, grated cheese, and chopped onion for a complete meal. Ingredients
- 1 medium onion, chopped
- 1 lb lean ground lamb
- 2 tablespoons olive oil
- 1/2 teaspoon red pepper flakes, to taste
- 1/2 tablespoon dried basil
- 1 teaspoon cumin
- 1/8 teaspoon cinnamon
- 2 cloves garlic, minced
- 3 1/2 tablespoons chili powder
- 1/2 teaspoon dried oregano
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon white sugar or 1 teaspoon brown sugar
- 1 bay leaf
- salt and pepper
- 1 (14 1/2 ounce) can diced tomatoes with juice
- 4 cups canned red beans, with liquid
- sour cream, for garnish
- grated cheese, for garnish

Method
- Heat the olive oil in a large pot and cook the chopped onion with the ground lamb.
- Once the onion is soft and the lamb is browned, add the red pepper flakes, basil, cumin, cinnamon, minced garlic, chili powder, oregano, cocoa powder, sugar, bay leaf, salt, and pepper.
- Cook the seasoned mixture for 1 or 2 minutes to let the spices combine.
- Add the can of diced tomatoes with their juice and the canned red beans with their liquid.
- Turn up the heat until the contents of the pot begin to boil.
- Lower the heat and let the chilli cook gently for 15 minutes.
- Ladle the finished chilli into bowls and add your preferred garnishes.
