Grilled Corn with Jerk Butter
This Caribbean side dish features sweetcorn cobs grilled with a flavourful jerk butter. The butter is made with ginger, thyme, allspice, nutmeg, garlic, spring onions, Scotch bonnet chillies, maple syrup, and lime zest. The corn is briefly boiled before being grilled and brushed with the butter as it cooks. Optional bacon can be wrapped around the cobs. It serves 8 and takes about 30 minutes to prepare.
Ingredients
- 2 thumb-sized pieces ginger
- 250g pack butter softened
- 2 tbsp thyme leaves roughly chopped
- 1/2 tsp ground allspice
- 1/2 tsp freshly ground nutmeg
- 3 garlic cloves crushed
- 3 spring onions finely chopped
- 1-2 scotch bonnet chillies, finely chopped
- 1 tbsp maple syrup (or use light brown sugar)
- zest 2 limes
- 8 large sweetcorn cobs
- 8 rashers streaky bacon (optional)
Method
- Finely grate the ginger and squeeze out its juice. Place the ginger flesh into a bowl with the softened butter, thyme, 1/2 tsp allspice, 1/2 tsp nutmeg, crushed garlic, chopped spring onions, chopped chillies, 1 tbsp maple syrup, lime zest, 1/2 tsp black pepper, and 1 tsp salt. Mix everything thoroughly. You can prepare this in advance. Keep 2 tbsp of the butter at room temperature for brushing and chill the rest, rolled into a log and wrapped, to slice later.
- Cook the sweetcorn cobs in boiling water for 5 mins until they turn bright yellow. Cool them under cold running water and drain. If you are adding bacon, stretch each rasher with a knife and tie it around the centre of a corn cob. This step can be done 1 day ahead and the corn refrigerated.
- Preheat your grill to its highest setting or prepare a barbecue until the coals are white and glowing. Cook the corn for 10 mins, turning it frequently, until it is tender and golden. If using bacon, it should become crisp. Brush the corn with some of the reserved soft jerk butter during cooking. Place the cooked corn on a serving dish, add more butter on top to melt, and serve immediately.
