Fry Bodi (Caribbean Green Beans)

Ingredients

  • glug of vegetable oil
  • 1 very ripe small tomato finely chopped
  • 1/4 onion finely chopped
  • 1 garlic clove crushed
  • 200g pack green beans trimmed

Method

  1. 1. Pour a glug of vegetable oil into a small pan and place it over heat. Once hot, add the finely chopped tomato and onion along with a pinch of salt. Cook, stirring frequently, for about 5 mins until they begin to soften. 2. Stir in the crushed garlic clove and cook for a further 30 secs. 3. Add the trimmed green beans to the pan. Cover with a lid and cook, giving it an occasional stir, for about 10 mins or until the beans are tender. Season with salt and pepper according to your preference.
