Fry Bodi (Caribbean Green Beans)
This is a classic Caribbean side dish known as fry bodi, featuring tender green beans cooked with a sofrito of ripe tomato, onion and garlic. It's a straightforward, flavourful recipe that comes together quickly, making it a perfect accompaniment to a main meal. The beans are simmered until just tender, absorbing the savoury notes from the softened vegetables. This recipe yields two portions and takes roughly 25 minutes from start to finish.
Ingredients
- glug of vegetable oil
- 1 very ripe small tomato finely chopped
- 1/4 onion finely chopped
- 1 garlic clove crushed
- 200g pack green beans trimmed
Method
- 1. Pour a glug of vegetable oil into a small pan and place it over heat. Once hot, add the finely chopped tomato and onion along with a pinch of salt. Cook, stirring frequently, for about 5 mins until they begin to soften. 2. Stir in the crushed garlic clove and cook for a further 30 secs. 3. Add the trimmed green beans to the pan. Cover with a lid and cook, giving it an occasional stir, for about 10 mins or until the beans are tender. Season with salt and pepper according to your preference.
