Granny's Banana Cream Pie (No Sugar Added)
This sugar-free version of a classic dessert uses mashed bananas to naturally sweeten a homemade custard. The recipe includes a simple, press-in pie crust that requires no rolling. Layers of fresh banana slices and creamy filling are finished with a light whipped cream topping after chilling. The entire process takes just over four and a half hours, including cooling time in the refrigerator.
Ingredients
- 1 1/2 cups flour
- 1 teaspoon salt
- 1/2 cup oil
- 2 tablespoons milk
- 2 bananas, mashed
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 3 egg yolks, lightly beaten
- 2 tablespoons butter or 2 tablespoons margarine
- 1 teaspoon vanilla extract
- 3 medium firm bananas
- 8 ounces heavy whipping cream
Method
- Begin by preparing the pie crust.
- Combine the flour and salt in a pie pan using a fork.
- Create a well in the middle and pour in the oil and milk.
- Use a fork to mix until the dough forms a ball.
- Press the dough flat into the pan to shape the crust and flute the edges.
- Bake the crust at 375 for 10-12 minutes until it turns golden.
- Next, make the filling for the pie.
- In a bowl, blend the mashed bananas with the flour, salt and a quarter of the milk.
- Once combined, add the rest of the milk and blend thoroughly.
- Cook this mixture over medium heat, stirring continuously, until it thickens and begins to boil.
- Let it boil for 2 minute.
- Take the saucepan off the heat.
- Stir a small spoonful of the hot mixture into the beaten egg yolks to temper them.
- Pour the yolk mixture back into the main saucepan.
- Cook for another 2 minutes, stirring constantly.
- Remove from the heat, mix in the butter and vanilla, then let it cool a little.
- Slice the firm bananas and arrange the pieces evenly over the baked pie crust.
- Pour the slightly cooled cream filling over the banana slices.
- Refrigerate the pie to allow it to set and cool completely.
- Finally, prepare the topping.
- Use an electric beater to whip the heavy whipping cream until stiff peaks form.
- Once the pie filling is cold, spread the whipped cream over the top.
