Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 cup oil
  • 2 tablespoons milk
  • 2 bananas, mashed
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 3 egg yolks, lightly beaten
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 teaspoon vanilla extract
  • 3 medium firm bananas
  • 8 ounces heavy whipping cream

Method

  1. Begin by preparing the pie crust.
  2. Combine the flour and salt in a pie pan using a fork.
  3. Create a well in the middle and pour in the oil and milk.
  4. Use a fork to mix until the dough forms a ball.
  5. Press the dough flat into the pan to shape the crust and flute the edges.
  6. Bake the crust at 375 for 10-12 minutes until it turns golden.
  7. Next, make the filling for the pie.
  8. In a bowl, blend the mashed bananas with the flour, salt and a quarter of the milk.
  9. Once combined, add the rest of the milk and blend thoroughly.
  10. Cook this mixture over medium heat, stirring continuously, until it thickens and begins to boil.

  12. Take the saucepan off the heat.
  13. Stir a small spoonful of the hot mixture into the beaten egg yolks to temper them.
