Ingredients

  • 2 pounds ricotta cheese
  • 6 large eggs
  • 1 pound cooked ham, chopped
  • 0.5 pound Genoa salami, chopped
  • 0.5 pound mozzarella cheese, grated
  • 0.25 pound prosciutto, chopped
  • 4 (9 inch) unbaked pie crusts
  • 0.25 cup grated Parmesan cheese

Method

  1. Set your oven to heat to 325 degrees F (165 degrees C).
  2. Put the ricotta cheese into a large bowl. Using an electric mixer on its lowest setting, incorporate the eggs one by one. Add the chopped ham, salami, grated mozzarella and prosciutto, mixing until everything is evenly distributed.
  3. Take two 9-inch pie pans and line them with the pastry crusts. Evenly share the ricotta filling between the two pans. Scatter the Parmesan cheese over each pie. Place the remaining pie crusts on top to cover the filling, then seal and crimp the edges. Make a few cuts in the top crusts to vent steam.
  4. Place the pies in your preheated oven and bake until the pastry turns a golden brown colour, about 1 hour. Once baked, transfer the pies to wire racks to cool completely.
