Easy Soda Bread
This straightforward Irish soda bread is a yeast-free loaf that needs no kneading or proving time. It combines wholemeal flour with bicarbonate of soda and is brought together with a homemade buttermilk mixture. The dough is shaped, scored and baked for 40 minutes, resulting in a rustic bread ideal for slicing. It yields about 10 pieces, making it a great side dish or snack.
Ingredients
- 500g plain wholemeal flour
- 2 tsp sea salt
- 1 tsp bicarbonate of soda
- 1 tbsp finely chopped rosemary (optional)
- 400ml whole milk
- 1 lemon juiced
- 2 tsp honey
Method
- Preheat the oven to 200C/180C fan/gas 6. Combine the flour, salt and bicarbonate of soda in a mixing bowl. Include the chopped rosemary at this stage if you are using it.
- In a jug, combine the milk and lemon juice. Leave it for a minute to thicken into buttermilk. Mix in the honey, then pour this liquid into the dry ingredients. Use a knife to stir for a minute until a sticky dough forms.
- Turn the dough out onto a surface dusted with flour and mould it into a round shape.
- Transfer the shaped dough to a floured baking tray. Use a sharp knife to cut a deep cross into the top.
- Place the tray in the oven and bake the bread for 40 mins.
- Let the loaf cool on a wire rack until it is just warm, then cut it into slices to serve.
