Cheesy Hamburger Soup
This is a straightforward and budget friendly soup that appeals to all ages. For extra heartiness and vegetable content, you can stir in a cup of thawed frozen corn and a can of green beans. It is a particular favourite in many households. The combination of ground beef, pasta shells and a creamy cheese sauce creates a satisfying one pot meal.
Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 clove garlic, minced
- 1 (15 ounce) can Italian-style diced tomatoes
- 6 -8 cups water
- 4 beef bouillon cubes
- 3 carrots, chopped
- 3 celery ribs, chopped
- 3 potatoes, cubed
- 1 cup dry small shell pasta (such as ditallini)
- 1 cup milk
- 3 tablespoons flour
- 8 ounces Velveeta cheese, cubed
Method
- Brown the ground beef with the diced onion and minced garlic in a 5 quart stock pot.
- Stir in the canned tomatoes, 6 to 8 cups of water, bouillon cubes, chopped carrots, cubed potatoes and chopped celery.
- Allow the soup to simmer for about 15 minutes until the vegetables become tender.
- Mix in the dry small shell pasta and continue simmering for about 10 minutes until the pasta is nearly cooked.
- Add the cubed Velveeta cheese and stir the soup until the cheese has fully melted.
- Whisk the milk and 3 tablespoons of flour together until smooth, then pour this into the simmering soup and stir until it thickens.
- You may need to adjust the milk and flour ratio to reach your preferred consistency.
