Cheesy Hamburger Soup

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 clove garlic, minced
  • 1 (15 ounce) can Italian-style diced tomatoes
  • 6 -8 cups water
  • 4 beef bouillon cubes
  • 3 carrots, chopped
  • 3 celery ribs, chopped
  • 3 potatoes, cubed
  • 1 cup dry small shell pasta (such as ditallini)
  • 1 cup milk
  • 3 tablespoons flour
  • 8 ounces Velveeta cheese, cubed

Method

  1. Brown the ground beef with the diced onion and minced garlic in a 5 quart stock pot.
  2. Stir in the canned tomatoes, 6 to 8 cups of water, bouillon cubes, chopped carrots, cubed potatoes and chopped celery.
  3. Allow the soup to simmer for about 15 minutes until the vegetables become tender.
  4. Mix in the dry small shell pasta and continue simmering for about 10 minutes until the pasta is nearly cooked.
  5. Add the cubed Velveeta cheese and stir the soup until the cheese has fully melted.
  6. Whisk the milk and 3 tablespoons of flour together until smooth, then pour this into the simmering soup and stir until it thickens.
  7. You may need to adjust the milk and flour ratio to reach your preferred consistency.
