Curried Pasta Salad
This pasta salad originates from a vintage 1979 recipe. It combines small shell pasta with a creamy curry dressing, crisp apple, cucumber, and red onion. The flavours meld together after several hours of refrigeration. It is served on a bed of shredded lettuce, optionally garnished with paprika. The recipe yields 6 servings and takes 260 minutes in total, including chilling time.
Ingredients
- 1 (8 ounce) package small shell pasta
- 1/3 cup bottled vinaigrette dressing
- 1 large Red Delicious apple, cored and diced
- 1 cup seeded and diced cucumber
- 1 cup slivered red onion
- 3/4 cup mayonnaise or 3/4 cup salad dressing
- 3/4 cup sour cream
- 1 -3 teaspoon curry powder, to taste (I use Spice Islands)
- shredded iceberg lettuce (for serving) (optional)
- paprika (for serving) (optional)
Method
- Prepare the pasta by cooking and draining it as directed on its package.
- Transfer the drained pasta to a large mixing bowl and combine it with the bottled vinaigrette dressing.
- Mix in the diced apple, cucumber and slivered red onion until well distributed.
- In a separate small bowl, stir together the mayonnaise, sour cream and 1 -3 teaspoon of curry powder.
- Gently fold this curry dressing into the pasta and vegetable mixture until everything is coated.
- Place a cover on the bowl and refrigerate the salad for several hours to chill and allow the flavours to blend.
- For presentation, arrange shredded iceberg lettuce in a glass salad bowl and top it with the chilled salad.
- A light sprinkle of paprika can be added as a garnish if desired.
- *Note:if you mix in a plastic bowl, the curry powder may stain it.
