Air Fryer Latkes
These traditional Jewish latkes are prepared in a modern way using an air fryer for a lighter, crispier result. With a simple base of grated potato, onion, egg, and breadcrumbs, they cook quickly to a perfect golden brown. Ideal as a side dish or a light dinner, they are traditionally served with cool sour cream or sweet apple sauce. The whole process takes around 20 minutes from start to finish.
Ingredients
- 1 pound russet potatoes, peeled and grated
- 2 large eggs
- 0.5 medium onion, sliced
- 0.25 cup seasoned bread crumbs
- salt and ground black pepper to taste
- nonstick cooking spray
Method
- Set your air fryer to heat to 375 degrees F (190 degrees C).
- Wrap the grated potatoes in a kitchen towel and press firmly to remove liquid. Move them to a mixing bowl and combine with the eggs, sliced onion, bread crumbs, salt, and pepper.
- Apply nonstick spray to the air fryer basket. Spoon approximately 1/4 cup portions of the potato mix into the basket. Lightly coat the tops with more spray.
- Cook in the air fryer until they are golden and crisp, which will take 8 to 12 minutes.
