Curried Delicata Squash Soup

Ingredients

  • 1 delicata squash, diced
  • 1 boneless skinless chicken breast, diced
  • 1 onion, diced
  • 1 lemon (zest and juice)
  • 1 tablespoon olive oil
  • 1 tablespoon turmeric
  • 1 tablespoon curry powder
  • 1 teaspoon red pepper flakes
  • 2 teaspoons minced ginger
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • handful spinach
  • 1/4 cup dried cranberries
  • salt

Method

  1. Cook the diced onion and minced garlic in olive oil for a couple of minutes.
  2. Add the diced squash and chicken to the pot and cook until the chicken is cooked through.
  3. Pour in the chicken broth and add the remaining ingredients, including the turmeric, curry powder, red pepper flakes, ginger, lemon zest and juice, cranberries, and salt.
  4. Allow the soup to simmer for 30 minutes.
  5. Stir in the handful of spinach just before serving.
