Curried Delicata Squash Soup
This quick curried soup brings together diced delicata squash and chicken breast in a fragrant broth seasoned with turmeric, curry powder, and ginger. Fresh lemon and a handful of spinach add brightness, while dried cranberries provide a touch of sweetness. It's a complete, comforting dish that can be prepared in about 50 minutes.
Ingredients
- 1 delicata squash, diced
- 1 boneless skinless chicken breast, diced
- 1 onion, diced
- 1 lemon (zest and juice)
- 1 tablespoon olive oil
- 1 tablespoon turmeric
- 1 tablespoon curry powder
- 1 teaspoon red pepper flakes
- 2 teaspoons minced ginger
- 3 garlic cloves, minced
- 8 cups chicken broth
- handful spinach
- 1/4 cup dried cranberries
- salt
Method
- Cook the diced onion and minced garlic in olive oil for a couple of minutes.
- Add the diced squash and chicken to the pot and cook until the chicken is cooked through.
- Pour in the chicken broth and add the remaining ingredients, including the turmeric, curry powder, red pepper flakes, ginger, lemon zest and juice, cranberries, and salt.
- Allow the soup to simmer for 30 minutes.
- Stir in the handful of spinach just before serving.
