Crawfish or Shrimp Fettuccini

Ingredients

  • 2 onions, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 1 -2 cup margarine
  • 1/4 cup flour
  • 2 tablespoons parsley, chopped
  • 2 cloves garlic, chopped
  • 10 ounces half-and-half
  • 2 lbs crawfish or 2 lbs shrimp
  • 2/3 lb Velveeta cheese or 2/3 lb American cheese, chopped
  • 2 tablespoons jalapeno peppers, chopped
  • 2/3 lb fettuccine pasta

Method

  1. Cook the chopped onions, celery, and bell peppers in the margarine until the onions become translucent.
  2. Mix the flour into the cooked vegetables.
  3. Place a lid on the pan.
  4. Allow the mixture to cook for 15 minutes, stirring frequently.
  5. Put in the chopped parsley and your choice of crawfish or shrimp, then cook for a further 15 minutes.
  6. Pour in the half-and-half, then add the chopped cheese, garlic, and jalapeño peppers.
  7. Season the sauce with salt and pepper as desired.
  8. Continue cooking the sauce for another 15 minutes.
  9. While the sauce cooks, prepare the fettuccine pasta according to the packet instructions, omitting salt from the cooking water.
  10. Toss the cooked noodles with the sauce, transfer to a 4-quart dish, and bake at 350 degrees for 15 minutes.
