Cheesy Garlic Potatoes
This comforting side dish features golden potatoes and a whole head of garlic boiled together until tender, then whipped with butter, milk, Greek yogurt and parmesan into a smooth, creamy mash. A final dusting of paprika adds colour and flavour. It's a simple, crowd-pleasing recipe that pairs wonderfully with a variety of main courses.
Ingredients
- 8 medium golden potatoes
- 1 large head of garlic
- 1/4 cup butter
- 1/2 cup plain Greek yogurt
- 1/2 cup low-fat milk
- 1/4 cup grated parmesan cheese
- 2 tablespoons paprika
Method
- Scrub the potatoes and cut each one into eight pieces. Clean the head of garlic, keeping the cloves whole.
- Put the potato pieces and whole garlic cloves into a large stockpot and cover them completely with water. Bring the water to a boil and cook until both the potatoes and garlic are soft, which should take about 18 to 20 minutes.
- Drain the cooked potatoes and garlic. Transfer them to a large mixing bowl and add the butter and milk. Whip the mixture thoroughly. Next, incorporate the Greek yogurt and grated parmesan cheese. Continue whipping until the mixture is completely smooth and creamy, for approximately 3 to 4 minutes.
- Transfer the mashed potatoes to your chosen serving bowl. Sprinkle the paprika evenly over the top.
