Cheesy Baked Bean Bakes
These golden bakes feature a delicious cheesy and beany filling encased in a soft sandwich thin. Perfect for a speedy lunch, snack, or light dinner, they bake in about 10 minutes. This recipe yields six satisfying portions that can be enjoyed hot or cold, making them a versatile and family-friendly option for any time of day.
Ingredients
- 6 soft sliced white or brown sandwich thins
- 60 g reduced-fat mature Cheddar cheese (finely grated)
- 200 g tin of 'no added sugar' baked beans in tomato sauce
- 1 medium egg (beaten)
Method
- Set your oven to 180°C and prepare a large baking tray with non-stick baking paper.
- Halve the sandwich thins. On a chopping board, distribute the grated cheese onto six of the halves, keeping a 1cm border clear.
- Spoon the baked beans evenly over the cheese on the six halves, again maintaining a 1cm gap from the edge.
- Brush beaten egg around the edges of these filled halves. Top each with a plain sandwich thin half. Press the centre down gently, then seal the edges by pressing and crimping them with a fork. Complete all six bakes.
- Transfer the bakes to your prepared tray. Brush them all over with the leftover egg. Bake in the preheated oven for about 10 minutes until they turn golden brown.
- Take the bakes from the oven and move them to a cooling rack. They are suitable for serving hot or cold, though hot is recommended. Enjoy them on their own or with a side of your choosing.
